BAKED GLAZED APPLES
  • 6 large apples
  • 1 cup apricot jam
  • 1 lemon juiced
  • 1/2 cup dried cranberries or cherries or whatever you like
  • 6 canned or fresh apricots
Core the apples, but leave the bottoms intact if you can. Divide the jam, dried fruit and lemon juice between the apples and fill the apples. Top the apples with the apricots and place in a baking dish and bake in a 400 deg oven until the apples are soft all the way through and start to look a little browned on the outside. Reserve the juice and pour a little on each one before serving.
