DINNER SALAD
This salad has all the elements necessary to make it a genuine dinner entree. The rice, chili and crunchy tender greens in large quantities make it a very satisfying (big !) meal for relatively few calories.
per serving:
  • 3 oz rice (raw)
  • 1 lb finely shredded cabbage
  • 1/4 lb romaine lettuce
  • 3 TBSP no-fat chili
  • 1 small chopped onion for salad and garnish
  • 1/2 cup three bean salad ( the usual canned or bottled variety is fat free)

Combine the cabbage lettuce and onion and toss it all together with the 3 bean salad. Cook the rice and spread 1/2 of it on a large dinner plate. Heap up as much salad as you can on the plate and cover with the rest of the rice. Top it off with the chili and chopped onion garnish.
