SAVORY LENTIL SOUP
  • 2 quarts Soup Stock or water
  • 1 cup lentils, rinsed
  • 2 large potatos, peeled and cut in chunks
  • 1 onion, chopped
  • 1 head garlic, roots trimmed, top 1/4" clipped off
  • 2 bay leaves
  • salt and pepper to taste
Put everything except the salt and pepper in a pot and cook at a low boil/high simmer until the lentils are very tender - about 1 hour. Remove the garlic and bay leaves. When cool, squeeze the garlic into the soup and discard the skins and roots. (The garlic will be very mild after cooking this way). Stir the soup vigorously to mash the potatos a bit. Salt and pepper to taste. A garnish of chopped diced raw onion and fresh dill wouldn't hurt a bit.
