PITA BREAD
  • 5 cups bread flour
  • 2 cups warm water
  • 2 Tbsp yeast
  • 1/2 tsp salt
Put the water and salt in a large pot or bowl and sprinkle the yeast on top of the water. Let it sit a minute and stir until the yeast is dissolved. Add 4 cups of flour and mix (at first with a big spoon and then by hand) until the flour is all collected in one lump. (Note: Its a lot easier to add a little flour to dough that's too wet than it is to add a little water to dough that's too dry.), If the dough is really sticky and hard to handle add more flour until the dough sticks to itself more than it sticks to you. Leave the dough in the pot, cover and let rise 2 - 3 hours. Time is not critical here, so a few more hours won't ruin anything. Preheat the oven to 500 deg. Take a walnut sized piece of dough and roll it out to a thin pancake shape. Use some flour on the work surface if anything sticks. I like to sprinkle a little coarse salt and some rosemary on it and roll it in. Put as many as will fit on a non stick baking sheet and bake until the bottom just starts to get a patch of brown (2 - 6 minutes depending on your oven). These cook fast once the oven heats up so check the first ones every half minute or so until you get the timing. Makes a dozen or so.
