SESEAME POLENTA
This is THE Polenta recipe for people who think they don't like the stuff. Use it as a dessert or a side dish like cornbread..
  • 2 cups water
  • 1 can corn kernels ( or fresh if its available )
  • 1 cup dried cranberries ( or yellow raisins, etc )
  • big pinch salt
  • 1 and 1/4 cups masa harina ( corn flour )
  • 4 TBSP toasted sesame seeds
Mix the water, corn, cranberries together in a large saucepan. Heat it on the stove and add the masa harina while stirring. It will thicken immediately. Keep stirring until its thick enough to keep the spoon standing up straight. Spread 2 TBSP of sesame seeds on a teflon baking sheet. Spoon out the polenta onto the baking sheet and spread it out 1/4 to 1/2 inch thickness with the backs of a couple of soup spoons. Top it with the rest of the sesame seeds. Bake in a 425 deg oven for 1/2 hour. Take it out of the oven, slide it onto a cutting board and cut it into 2 inch squares. Put it back in the oven for another 15 minutes. Make lots. They go fast.
