| Prepare the Pita Bread dough. Preheat the oven
to 500 degrees. Take a walnut sized ( about 1 1/2 oz) piece of dough. Grab a big pinch of yellow raisins or
other small dried fruit like cranberries or cherries and push it into the dough
ball. Roll it out to a thin pancake shape. Use some flour on the work surface if
anything sticks. After the bread is rolled out sprinkle a little cinnamon,
sugar and a small pinch of salt on top and roll it in one last time. Put as many as
will fit on a non stick baking sheet and bake until the
bottom just starts to get a patch of brown (2 - 6 minutes depending on your oven).
These cook fast once the oven heats up so check the first ones every half minute
or so until you get the timing. Makes a dozen or so. Stack them on a plate as they
come out of the oven and cover them with a towel to keep them warm. Serve right away.
They look great when you hold them up to the light.!
